What is Hibachi?

Hibachi is a cooking style originally from Japan that has evolved over the years. Ingredients such as meats, veggies, rice are cooked on a large flat griddle like station. Sauces, seasonings, and marinades are used to help meats, veggies and rice taste oh-so-delicious. Japanese hibachi steak marinade is super delicious!

There’s actually a lot more history to Hibachi so if you’re interested in learn check out this article.

What you need to make Hibachi at Home

I’ll explain everything you might need to make this happen.

Equipment

For the full ‘hibachi’ feel, you can use an electric griddle or Flat Top Grill outside! One very popular Flat Top Grill is Blackstone Flat Top Grill.

We keep it simple by using an electric griddle that we place on our table out on our patio. With this we can sit around with the various ingredients we want to cook (meat, veggies, seafood, etc.) and eat while we cook – similar to how you would eat hot pot.

Of course if you don’t have the set up or just want to make some hibachi style steak, you can also make hibachi steak with marinade and then cook it on your stovetop with your favorite cooking pan or wok.

Ingredients

Ingredients wise, you will need some sort of cooking oil or fat to make sure the meat, seafood, veggies you are making don’t stick to your griddle/grill/pan. I recommend butter – it adds the most flavor! However, you can also use ghee, coconut oil, margarine, etc.

The second thing you need is actually – Anything you want to hibachi up! Just make sure it’s not some giant thing that will take forever to cook, so cut up your steaks to small pieces, for example. Some ideas include:

  • Steak, cut in to smaller pieces
  • Chicken, cut in to smaller pieces
  • Salmon, sliced or cut in to smaller pieces
  • Mushrooms, sliced
  • Shrimp

Here’s some of the creative ingredients we used!

If you like yum yum sauce or ginger sauce, be sure to prepare those too! You can purchase them or make your own!

Marinade

This is the trick to making your hibachi steak delicious! Yes, you can just cooked the steak without the marinade and add salt and pepper, but what’s the fun in that?

Hibachi Steak Marinade (5)

Here’s how to make hibachi steak marinade for the steak – You may want to adjust the ratio depending on how much meat you have:

  • 1/4 cup soy sauce
  • 2 green onions, chopped
  • 3 cloves of garlic, minced
  • 3 tbsp honey
  • 2 tbsp sesame oil

How long to marinade?

I pretty much marinade every meat these days, ex. stir fry steak, steak fajitas, chicken with broccoli, and I have to say the longer the better – at the very least, 30 minutes for this one, however I’ve gone 15 minutes before. The longer, the more flavorful it will be!

You can actually marinade overnight too – if you do this just be sure to put the meat in the refrigerator after 30 minutes of sitting out so it doesn’t go bad.

How much marinade per pound of meat?

The amount of marinade this produces can be used to marinade about half a pound of steak more or less.

How to hibachi at home

In a bowl, add your meats (steak, chicken, shrimp, fish, etc.) with marinade ingredients at least 30 minutes. You can also use a large zip lock bag if you prefer. You can marinade overnight too. Just make sure to put it in the fridge if you’re going to be marinating it longer.

Fire up your griddle or grill, and greaseup your griddle/grill/pan with cooking fat of choice – we like to use butter.

Place your ingredients on the griddle/stove top and flip as desired to cook all the sides evenly. Since the steak is bite sized, it’ll cook pretty fast so keep an eye on it.

Wait while you smell how delicious the food is.

Eat when it’s done!

Hibachi Steak Marinade (8)

Repeat until way too full!

I really recommend doing this during spring, early summer, late summer, or fall – when it’s not too hot outside but you still get a summer vibe.

Also, something else you can do is make some salad at the side so that you eat salad while you wait.

This type of meal is best with a large group of friends around so you’ll be having a blast and before you know it, your yummy homemade hibachi will be ready to eat!
