About this easy roasted Crushed New Potatoes recipe

Our family has a serious addiction to potatoes and they could have them for every other meal of the day. Roast Potatoes, Mashed Potatoes, or even potato curry to accompany tomato rasam for lunch/ dinner.

We love smashed potatoes so much, that sometimes I do make Masala Smashed potatoes too. The method of preparation is similar, except the seasoning mixture has an aromatic blend of Indian spices. And the good news is, the Masala version of Crushed Potatoes is Vegan.

I had recently watched the “Nigella on the table” program and absolutely loved how she paired Feta Cheese with roast potatoes. This was somewhere my inspiration to add crumbled feta cheese to my smashed potatoes recipe.

I really cannot get enough of the combination of flavors that pairs with the potatoes. This easy recipe is so delicious that, let me tell you if you have got any leftover potatoes you could go ahead and make some mind-blowing toasted smashed potatoes sandwiches or even Bubbles and Squeak.

What is Smashed Potatoes?

Smashed Potatoes” also known as Batatas a Murro, is a traditional Portuguese Dish. It is known for its unique method of preparation. They’re absolutely comforting food just presented in a unique way. These potatoes look gorgeous on the table and would make a perfect accompaniment on the Christmas menu.

Ingredients you will need for Garlic Smashed Potatoes

Potatoes – This recipe uses New Potatoes or Mini potatoes, that have waxy and crispy skin. You may use any variety of small potatoes for this recipe

Garlic – Both fresh minced garlic or garlic powder works. However, I love the addition of fresh garlic cloves.

Lime or Lemon Juice – Either of the citrus element works and use what is available at home. I would not miss them in the recipe.

Salt & pepper – A generous seasoning of salt flakes and freshly ground pepper adds an oomph to the flavors. You may also use Table salt, however, use a little less comparatively.

Cheese – Both Cheddar and Parmesan cheese would work. Although it is optional, if you have an extra 10 minutes, do not miss this step.

Olive Oil – Good quality olive oil mixed with the seasoning dictates the flavors. However, you can use Vegetable or Sunflower oil. Bear in mind, the flavors will vary accordingly.

Feta Cheese and Rosemary make a fantastic topping to the smashed potatoes.

How to make Smashed Potatoes?

First, boil the potatoes in salted water and cook for 15 minutes or until soft.

Drain the potatoes into a colander and prepare the baking tray.

Brush olive oil on the baking tray and place the drained potatoes.

Gently crush the potatoes with a potato masher/fork, so that they remain in one piece.

Brush the potatoes with the seasoning mixture of olive oil, lime juice, rosemary, garlic, sea salt & pepper.

Bake in the preheated oven for 15-20 minutes. This time can vary depending upon the size of the potatoes. So do check for the time.

Sprinkle cheddar cheese or vegetarian parmesan cheese and bake for another 5 minutes until they melt.

Top it with feta cheese and an extra helping of herbs and serve immediately.

Tips to make delicious Smashed Potatoes

Use New Potatoes – New Potatoes also known as baby potatoes works really well in this recipe. The new potatoes have a waxy crispy skin and are not mature enough like their fully-grown counterparts. They are also sweeter in taste as their sugars are converted into starch yet.

Cook the potatoes well and allow the potatoes to cool down, before being ready to crush/ smash.

Smash the Potatoes so that they are in one piece – Use a fork or a potato masher to smash/ crush gently until they are in one piece and not disintegrated.

Generous seasoning – Brush a generous serving of seasoning on the new potatoes.

Use good quality Olive Oil in this recipe for Smashed potatoes. They make a huge difference in flavors.

How to make Air fryer Smashed potatoes recipe?

To make air fryer smashed potatoes,

  • Boil the potatoes in salted water until tender.
  • Gently smash the potatoes with a fork or a cup, ensuring they remain in one piece.
  • Brush the smashed potatoes with a seasoning made of olive oil, lime juice, salt, pepper, rosemary, and garlic.
  • Transfer the potatoes to the air fryer basket or a baking dish that fits inside the air fryer.
  • Air fry the potatoes for 12-15 minutes or until crispy.
  • Sprinkle cheese on top of the potatoes and air fry for an additional 3 minutes.
  • Finally, sprinkle feta cheese and rosemary on top just before serving.

Storing Leftovers

Store leftover smashed potatoes in an airtight container in the refrigerator for up to 4 days.

When reheating, either microwave the potatoes, covering the container with a lid or microwave-safe wrap, or heat them up in the oven.

For oven reheating, preheat to 350°F / 175C, place the potatoes in an oven-safe dish, cover with aluminum foil, and bake for about 15-20 minutes or until heated through.

Enjoy this easy, tasty, and delicious Crushed Potatoes as a wonderful side dish for your mains. Crispy on the outside with tender centers. Top it herbs, feta cheese and enjoy.

Ingredients

  • 450 g New Potatoes
  • 2 Cloves Garlic minced
  • Juice of 1 Lime
  • 1 tsp Sea Salt
  • ½ -¾ tsp Ground Black Pepper
  • 4 tbsp Cheddar Cheese
  • 2 tbsp Olive Oil + 1 tsp for greasing

Toppings

  • 2 tsp Rosemary roughly chopped
  • 75 g Feta Cheese crumbled

Instructions

  • Wash & Scrub Potatoes well and boil them in enough water with 1 Tsp of Salt until fork tender.

  • In a small bowl, add Olive Oil, juice of a lime, a sea salt, pepper, rosemary, and garlic. Mix well and set it aside.

  • Preheat the oven to 180 C. Grease the baking sheetwith olive oil.

  • Place the potatoes on the baking tray. Smash the potatoes with a fork or potato masher gently until they are in one piece. Do not press too hard as they may disintegrate.

  • Generously brush the olive oil mixture over the potatoes and bake them in the oven for 15-20 minutes..

  • Sprinkle cheese on the potatoes and bake for 5 minutes or until they melt.

  • Sprinkle crumbled Feta Cheese and Rosemary on the smashed potatoes and serve immediately. . Enjoy them as a side dish!
