Skinny beef enchiladas are 5 smart points for one very large enchilada and you can make these in the air fryer. Serve them with some Mexican rice and Fat-Free refried beans (the FF refried beans are 0)! Only 4 ingredients needed to make these.

Why You Will Like This Recipe

Beef Enchiladas are my favorite food to order at Mexican restaurants next to fajitas. They usually are served with a plate full of beans, rice, and smothered with cheese. Whenever I order a side of sour cream I end up getting a huge bowl of sour cream, and all I need are 2 spoonfuls of sour cream.

Why do Mexican restaurants do this to you? I get so full by eating all the free chips they give you and then they give you way too much sour cream on the side. I have no self-control over all the chips and salsa!

My only beef with the air fryer when melting cheese on top of things is that it makes it look not so melted. LOL

Ingredients Needed

  • Sauce When it comes to enchiladas, I like red sauce. No shame in using the canned stuff here. I tried making a 0 point enchilada sauce, but enchilada sauce calls for a roux with flour and butter, so that is impossible to make. *Sigh. There are many good brands that make decent enchilada sauce out there. One of my favorites is from Trader Joe's. Whenever I make a trip to Trader Joes, I stock up on their enchilada sauce because it is the best. Otherwise, than that, I use whatever I can find locally.
  • Ground Beef Sure you can go ahead and use something other than ground beef to make these beef enchiladas lower in points but ground beef is the way to go. Let’s face it, people, ground beef will never be low in points like chicken or turkey and that is ok! It is ok to eat ground beef every now and then and it is also one of my favorites. If you wanted a recipe for turkey enchiladas, look up turkey enchiladas!
  • Tortillas The brand of tortillas can really make or break a recipe depending on how low in points you want this to be. The lowest point tortillas I’ve found are 1 point and they are the Ole Extreme Wellness Brand. I think their tortillas are pretty decent considering the fact that they are only one point. Ole Wellness brand tortillas are kind of large ones and 10 might not all fit in a pan. I also like Banderita Carb Counter Whole wheat wrap. Another brand that is only 1 point as well. This one is the favorite that I've tried so far.

How to Make Enchiladas

Step 1: Add ½ of a canof enchilada sauce to the ground beef. Stir the ground beef and enchilada sauce together until well combined and set aside.

Step 2: Spoon ⅓ cup of meat sauce and 2 tablespoons of sauce on top of beef. The sprinkle cheese on top. Roll them up.

Step 3: Roll the enchiladas up and place them side by side in the air fryer basket. It is best to use some parchment paper or tinfoil so that the sauce doesn't leak.

Step 5: Add the rest of the enchilada sauce on top of the tortillas and add 8 oz of cheese on top. Garnish with parsley or green onions (optional). Air fry at 400 for 5 minutes. Take out of air fryer and place 2 enchiladas on a plate. Spoon leftover enchilada and cheese on top and place in microwave for 1 minute.

Serving size: 1 enchilada.

What to serve with Homemade Enchiladas?

Some traditional options include Mexican rice, refried beans, and a fresh salad. Mexican rice is a flavorful side dish made with tomatoes, onions, and spices, adding a nice contrast to the richness of the enchiladas.

Refried beans or some cooked steamed Microwave Mexican rice packets are a great option to pair with Enchiladas.

Alton Brown's Guacamole or Pineapple Guacamole is always a classic pairing with homemade enchiladas.

Additionally, a fresh salad with lettuce, tomatoes, avocado, and a tangy dressing can add a refreshing crunch to balance out the flavors of the enchiladas.

Description

Skinny beef enchiladas are 5 points for one very large enchilada. Serve them with some Mexican rice and Fat-Free refried beans (the FF refried beans are 0)! Only 4 ingredients needed to make these.

  • 12 oz of 96% lean ground beef
  • 12 oz of enchilada sauce (I use Old El Paso)
  • 6 flour tortillas such as Ole Extreme Wellness brand
  • 1 ¼ cup fat-free cheddar cheese blend or reduced fat mexican cheese blend (will be more points for reduced fat

Instructions

  1. Preheat oven to 350. Brown ground beef in a pan until it's no longer pink. Drain any extra fat.
  2. Add ½ of a canof enchilada sauce to the ground beef. Stir the ground beef and enchilada sauce together until well combined and set aside.
  3. Pour the rest of the first can you opened of enchilada sauce on the bottom of your 9X13 in pan.Place about ¼ cup of beef mixture onto a flour tortilla and roll it up like a burrito and lay seam side down in a 9 X 13 baking dish.
  4. Add the other can of enchilada sauce on top of the tortillas and add 8 oz of cheese on top. Cook enchiladas for 20 minutes at 350 degrees. Garnish with parsley or green onions (optional)
  5. Serving size: 1 enchilada.

    I use a very easy enchilatha sauce . No salt. Buy your Ancho chilies at walmart. They will be dried in the Mexican food isle. Take the seeds out and the stem. Rince pepper then soak in hot water for 20 to 30 mimites. pour water and chilies in the blender. Make sure you don't put the stuff that settles at the bottom of the bowl in the blender. Blend until smooth. Easy , cheep and delish. No salt.

    I used 93% ground turkey instead of beef. It was delicious and my husband loved it. I served an avacodo with old bay seasoning as a side and fresh green beans. Low calorie and so very good. I will definitely make again!!!!

    Made these for dinner tonight and my hubby couldnt stop raving about them!! I used green chili enchilada sauce ~ thinking it would be regular but with green chilies! Next time maybe I'll use reg sauce and add the chilies but it was still fabulous. Only thing I added was I spread some sauce on the bottom of the dish before adding the enchiladas. Also served with a side of refried beans and spanish rice. Definite keeper!!
